Zapote Bar is a love letter to the Yucatán, its products, culture and people. Founded and operated by Rosewood Mayakoba under the leadership of Chef Juan Pablo Loza in collaboration with hospitality and cocktail experts Alberto Gonzalez and Jose Luis Leon. Zapote is a day-to-night destination that offers gracious service, inspired food and quality cocktails using Mayan ingredients, tools, and techniques. The experience is a journey of innovative flavors representing the very best of sophisticated Mexican artisanship and the conviviality of hacienda culture in a luxurious setting.
