In a broader sense, “sopa boba” describes a bland dish made from water and scraps, lacking nutrients, provided to certain groups in times of scarcity. This could include prisoners, students in boarding schools, soldiers, sailors, or refugees held in camps.
Ingredients:
- 1 cup diced sweet potato
- 1 cup diced potato
- 1 vegetable stock cube
- 6 cups water
- 1 cup noodles
- 1 teaspoon chopped parsley
- ½ teaspoon crushed garlic
- ¼ cup chopped celery
- 4 slices of bread
- 1 tablespoon vinegar (optional)
Method:
- Combine salt, herbs, vinegar, garlic, oil, and chicken stock in a pot. Bring to a boil and simmer for 15 minutes over medium heat.
- Add the potatoes and sweet potato. After five minutes, add the noodles, stirring regularly to prevent sticking. Add water as needed and season with salt to taste. Remove from heat.
- Toasted or fried bread makes a perfect accompaniment. Serve and enjoy a hearty, comforting meal.
