Heartfelt Tributes Pour In for Franco Prevedello, the ‘Godfather’ of Toronto’s Culinary Scene
In a city known for its rich food scene, Franco Prevedello stands out as the ‘Godfather’ who shaped Toronto's culinary landscape over four decades. Arriving in 2022 from Australia, I’ve witnessed firsthand how deeply his influence is felt in the local dining community.

Prevedello owned or operated over 25 restaurants, including beloved spots like Centro and Splendido, transforming Toronto from a staid dining destination to a hub of innovation and flair. His legacy is marked by the open kitchens, wood-fired ovens, and imported ingredients that defined modern Canadian cuisine.
Tragically, Prevedello passed away recently, and the culinary community has responded with heartwarming tributes. Chefs like Mark McEwan, who worked under Prevedello at Pronto, shared poignant memories of their mentor. For many, Prevedello wasn’t just a boss but a friend and a mentor, whose guidance helped shape their careers.
His impact extends beyond his restaurants. Prevedello co-founded Second Harvest, a food-recovery program that fights food waste, nearly 35 years ago. This work, along with his mentorship, leaves an indelible mark on Toronto's food scene.
Arrived in Toronto in 2022 from Australia. Still figuring things out, writing it down as it happens.
