I recently converted a covered patio into a small 10x10 room and used a general contractor who didn't pull an electrical permit. Now we're in a bind and I'm looking for advice on how to get an inspection done with minimal damage.

You don't have to tear into the drywall, but you do need to hire a licensed electrician who can handle the inspection and potentially fix any issues.

It's a common misconception that homeowners can do electrical work without a permit, but enclosing a space is treated like an addition and requires permits. You'll need to hire a licensed electrician to fix the issue and get the necessary inspections.

Unfortunately, you can't see everything through the drywall, so you'll need to contact a licensed electrician and explain the situation. They can help you figure out what to do next.

I'm looking for a recommendation for an electrician who can help me sort out this mess. Does anyone know of a good one in the area?

There are companies that specialize in code compliance issues and can help you retroactively fix any problems. You might need to do some research to find one that suits your needs.
