When Chef Martín Louzao decided to open Cocina Abierta, he knew that it would have to be a concept that was not static, where he could let his imagination run, play with fresh ingredients and precisely be open to the integration of flavors from other parts of the world to create unique dishes. Hurricane Maria has given him the opportunity to integrate even more the playing with tastes and the frequent change of the menu that now moves according to the season and the ingredients that are locally available in each of them.
