About
Cook between 1980 and 1988 in 1, 2, and 3 Michelin star restaurants, I opened my wine bistro 'Chez Janou' in 1988 in the Marais district and 'La Timonerie' in 1989, my restaurant, quai de la Tournelle in the 5th arrondissement in Paris, with my first natural wines in the cellar : Jean-Paul Brun, Marcel Deiss, Domaine De La Bongran (Thevenet), Marcel Lapierre, Jacques Selosse, Claude Courtois, Didier Dagueneau, Denis Duveau and Les Frères Foucault. From 1991 a Michelin star, accompanied by wide recognition from the press until 1998, rewarded the work of my team. Today at ‘La Cave’ I sell the work and skills of talented winegrowers and I am happy to share with you my passion for natural wines. The wines are directly imported.
