What are typical wages for servers and baristas in Mexico City?

I've noticed that some servers and baristas in Mexico City can be quite aggressive when it comes to getting tips or adding extra charges to the bill. I'm wondering if this is a common issue in the city and if it's related to racism or classism.

In Mexico, there is racism and classism, but it's not the same as what you're used to in the US. You're trying to impose your own brand of racism on us, but we didn't have the same kind of segregation and racism that you did.

The history of racism and colorism in Mexico is very different from the US, with a 100-year apartheid in the south and the 'one drop' rule.

To me, it's clear that racism is a widespread issue in Mexico, normalized and justified by the country's 'mestiza' narrative that only benefits whites or lighter-skinned people.
