State Fair of Texas go-to foods, excluding trendy options?

I'm looking for recommendations on State Fair foods that are worth trying, excluding the newest and trendiest options. I already know to get a Fletcher's Corn Dog and a Dickel's turkey leg.

I'm a big fan of the Cajun shrimp stuffed baked potato at the fair. It's one of the few items that's worth the price, and it's a generous serving with a good amount of shrimp.

Shugs (formerly Stubbys) has been serving classic cinnamon rolls for as long as I can remember. Their rolls are the best I've ever had, and they're the main reason I even consider going to the fair.

Fried cheesecake is my go-to fair food, aside from the corny dog. It's a sweet treat that's hard to resist.

Every year, I head to Berts for the Fried Frito Pie Bites. The Chocolate Covered Strawberry Waffle Balls at Zables, located in front of the Automobile building, are also a favorite. Smokey John's stands in the Tower Building (food court) serve amazing Fried Reeses, and the Stuffed Fried Chicken Wing is a must-try. Nevins' Ranch Hog Wings are a tender and juicy eat-with-your-hands serving of pork.
