If you're near Mexico City, Puebla is definitely worth a visit. In the city, I recommend El Bajio, El Cardenal, Los Danzantes in Coyoacan, and Azul Historico downtown. The chef at Azul Historico is particularly notable for being a Mexican food researcher who carefully follows traditional recipes.
