Day activities for seniors around Tampa Bay area?

My mom (74f) and her friend (68f) are visiting me from France for a couple of weeks. They are both in good shape, with a curious mind, open to both city and nature activities. Not much for shopping or group activities/classes but they enjoy hikes/bike rides/cultural visits/nice scenery/historical stuff etc.... One of them is afraid of water, I hope she'll be ok with the kayak but no swimming/diving. They will have access to my car, 2 kayaks and 2 bikes. What are your favorite/recommended activities within the area (Radius of ~1h drive around Tampa, back in Plant City at night).

Considering the drive, an afternoon in that area would be worthwhile, especially with the opportunity to explore the Dali Museum's surroundings and enjoy a meal at one of the nearby restaurants.
